E523 - Aluminium ammonium sulfate: Prepared from natural aluminium sulphate. It is used as acid source in baking powder for bakery products, baked at high temperature. It also stabilises colours. Used in Industrial baking powder. Acceptable daily intake (ADI): Up to 0,6 mg/kg bodyweight. Aluminium inhibits the uptake of B-vitamins. It may also influence liver function in high concentrations.
